Mozzarella grilled Cheese with Tomato and Arugula

Ingredients
- 2 slices ciabatta bread
- Extra virgin olive oil
- 2 slices mozzarella (smoked mozzarella is especially good)
- 2 slices low-fat cheddar cheese
- 2 thin slices tomato
- 2-3 large arugula leaves
- Salt and freshly ground pepper

Preparation
Step 1
Heat a skillet over medium heat.
Brush 1 side of each slice of bread with olive oil. Place 1 slice of bread oil side down in the hot skillet. Top the bread with mozzarella, cheddar, and then alternating slices of tomato and arugula. Season the tomatoes with salt and pepper as you go. Finish the stack with a final slice of mozzarella and cheddar and the other slice of bread, oil side up.
Cook for 2 to 4 minutes, until the bottom slice is golden brown. Then flip the sandwich over and cook the other side. When both sides are golden brown, remove the sandwich from the skillet, cut in half, and enjoy.
