  • 1 tablespoon unsalted butter
  • 1 cup steel cut oats
  • 3 cups water
  • 1 cup milk or non dairy milk of choice
  • 1/2 teaspoon sea salt
  • 1/3 cup pumpkin puree
  • 2 tablespoons brown sugar
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon freshly ground nutmeg
  • 1/2 teaspoon ground ginger
  • 4 tablespoons maple syrup
  • 1 cup toasted pecan pieces

Step 1

In a large heavy pot or saucepan, melt the butte.r Add the oats and saute until fragrant, about 5 minutes. Remove oats and set aside.

Back in the pot, bring the water, milk, and salt to a simmer. Slowly stir in the oats, keeping the heat on a gently simmer. Cook, stirring occasionally to keep the bottom from scorching, for 25 minutes, or until the mixture is soft and loose. Stir in the pumpkin, sugar, cinnamon, nutmeg, and ginger and cook another few minutes for the flavors to blend.

The oats will thicken as they rest. Serve each bowl with a drizzle of maple syrup and chopped pecans.
