Ingredients
- 2 pounds chicken tenders or 4 large chicken breasts
- 2 sleeves Ritz crackers
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 cups grated sharp cheddar cheese
- 1 large onion, diced
- 1 teaspoon parsley
- SAUCE
- 1 10oz can cream of chicken soup
- 2 tablespoons sour cream
- 2 tablespoons butter

Step 1
combine soup, sour cream, and butter in medium sauce pan. heat over medium to medium low heat, stirring occasionally.
crush crackers. If using chicken breasts cut each breast into 3 large strips. spray 9/13 pan with cooking spray. spread 1 sleeve of crackers evenly over bottom of pan. spread half of cheese over crackers. spread half of onion over cheese. place chicken strips on onions. sprinkle with parsley. spread rest of onion over chicken. spread rest of cheese over onion. spread 2nd sleeve of crackers over cheese. cover with tin foil and bake at 400 degrees for 30 to 35 minutes. remove tin foil and bake an additional 15 minutes. Serve with sauce.
