  • 1 (16.5-ounce) package white cake mix
  • 1 (4-serving size) package strawberry-flavored gelatin
  • 1 (10-ounce) package frozen sweetened sliced strawberries, thawed and drained
  • 4 eggs
  • 2/3 cups vegetable oil
  • 3 cups confectioners' sugar
  • 1/2 cup strawberry preserves
  • 1/3 cup butter, softened

Step 1

Preheat the oven to 350 degree F. Coat two 9-inch round cake pans with nonstick cooking spray, set aside.
In a large bowl, with an electric beater on medium speed, beat the cake mix, gelatin mix, strawberries, eggs, and oil for 2 to 3 minutes, or until well mixed. Divide the batter between the cake pans. Bake for 30 to 35 minutes, or until a wooden toothpick inserted in the center of each comes out clean. Let cool for 10 minutes, then invert onto wire racks to cool completely.
In a medium-sized bowl, with an electric beater on medium speed, beat the confectioners' sugar, strawberry preserves, and butter for 2 to 3 minutes, or until smooth. Place 1 cake layer upside down on a serving plate and frost the top. Place the second layer over the first and frost the top and sides.
Chill for 2 hours then serve, or cover loosely and keep chilled until ready to serve.
