You can add other ingredients and it still tastes the same.
Cook the chicken ahead of time but add it later on; otherwise it tastes overcooked and flavorless.

Ingredients
- 1 lb. shredded, cooked chicken
- 1 (15 oz) can whole peeled tomatoes, mashed
- 1 (10 oz) can enchilada sauce
- 1 medium onion, chopped
- 1 (4 oz) can chopped green chiles
- 2 cloves garlic, minced
- 2 cups water
- 1 (14.5 oz) can chicken broth
- 1 tea. cumin
- 1 tea. chili powder
- 1 tea. salt
- 1/4 tea. pepper
- 1 bay leaf
- 1 (10 oz) pkg. frozen corn
- Options: sour cream, lime, avocados, and cheese

Step 1
Place all ingredients in a 4-5 qt. crock pot. Cover, and cook on low for 8-9 hours or on high for 4-4 1/2 hours.
