Ingredients

  • 1 1/2 lb. ground beef
  • 2 cloves garlic, minced
  • 3 T. parsley flakes, divided
  • 1 T. basil
  • 3 1/2 tsp. salt, divided
  • 1 16 oz. can tomatoes
  • 1 12 oz. can tomato paste
  • 3 C. cream style cottage cheese
  • 2 eggs, beaten
  • 1/2 tsp. pepper
  • 1/2 C. parmesan cheese
  • 1 lb. mozzarella, sliced
  • 8 lasagna noodles, cooked

Preparation

Step 1

1. Cook lasagna noodles according to directions.

2. Brown meat. Drain excess fat. Add garlic and 1 tsp. parsley, basil, 1 1/2 tsp. salt, tomatoes, and tomato paste. Simmer uncovered 30 minutes. Stir occasionally.

3. Preheat oven to 375 degrees.

4. Combine cottage cheese, eggs, 2 2/3 T. parsley, 2 tsp. salt and parmesan cheese.

5. Place half of the cooked noodles in a 13" X 9" baking dish. Spread half the cottage cheese mixture over noodles. Add half the mozzarella cheese and half the meat sauce. Repeat layers - noodles, cottage cheese, mozzarella cheese, meat sauce.

6. Bake for 45 minutes, covered. Let stand for 10-15 minutes before cutting into squares to serve. Freeze unused portions.
