Company's Coming Salad

Ingredients

• Dressing:
• 3/4 c. light mayo
• 3 T. light sour cream
• juice of 1/2 lemon
• 1/2 tsp. Jane's crazy salt
• 1 tsp. garlic powder
• 8 oz. Gorgonzola
• 2 T. red wine vinegar
• 1 T. nonfat buttermilk
• fresh ground pepper, to taste
• Salad:
• 4 c. arugula
• 1/2 red onion, sliced thin
• 1 red pepper, sliced
• 1/2 English cucumber, sliced
• 1 c. toasted pecans, chopped roughly

Preparation

Step 1

Dressing:
In a medium bowl, mix all ingredients together.

Salad:
In a salad bowl, toss all salad ingredients.

To serve:
Drizzle top of salad with the dressing.
