Ingredients
- 3 whole chicken breasts cut up into small pieces. Diced.
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 Tbsp butter
- 1 medium onion sliced thin or diced
- 3/4 cup salsa
- 1 cup dairy sour cream
- 1 cup grated cheddar
- 1 cup grated Monterrey Jack
- Long Grain White rice

Preparation
Step 1
Cut Chicken into pieces. Season with salt and pepper. Brown in the butter.
Remove chicken from pan and sautee onions.
In a 13x9 casserole dish, arrange chicken, top with onions, salsa, sour cream and cheeses.
Bake uncovered at 350 for 30 minutes
