Ingredients

  • 1 cup onion, chopped
  • 2 garlic cloves, pressed
  • 1 tablespoon butter or margarine
  • 1 can (4 ounces) chopped green chilies, drained
  • 6 (6-inch) corn tortillas
  • 3 cups (12 ounces) shredded cheddar cheese, divided
  • 12 eggs
  • 3/4 cup milk
  • 1/2 teaspoon salt
  • Salsa (optional)
  • sour cream (optional)

Preparation

Step 1

preheat oven to 350 degrees Fahrenheit. In a small skillet, melt butter over medium heat. Add chopped onion and pressed garlic; cook and stir 3-5 minutes or until onions are tender. Stir in chilies; set aside. Using a pizza cutter, cut tortillas into 1/2-inch-wide-strips. Place half of the tortilla strips evenly onto bottom of a 9" x 13" baking dish. Top with half of the onion mixture and 1 1/2 cups of the cheese. Repeat layers. in a large bowl, whisk eggs, milk and salt together. pour egg mixture over layers in the baking dish. Bake 30 -35 minutes or until center is set. let stand 10 minutes before cutting into squares to serve. Top with salsa and sour cream, if desired
