Ingredients

  • 1/2 lb lean ground beef
  • 1 small onion, finely chopped
  • 2 1/2 cups flour
  • 1 tbsp brown sugar
  • 2 tsp baking powder
  • 1 tsp seasoned salt
  • 3/4 cup ketchup
  • 1 tsp ground mustard
  • 3/4 cup evaporated milk or regular milk
  • 1/2 cup butter, melted
  • 2 large eggs
  • 2 cups shredded cheddar cheese

Preparation

Step 1

1. In a skillet, cook beef and onion over medium heat until done. Drain.

2. In another bowl, combine the flour, sugar, baking powder, mustard and salt.

3. In a mixing bowl, combine ketchup, milk, butter and eggs. Mix in the dry ingredients just until moistened. Fold in the beef mixture and cheese. Fill greased muffin cups 3/4 full.

4. Bake at 425F for 14-18 mins or until toothpick comes out clean. Cool for 5 mins before removing from pans to wire rack. Refrigerate any leftovers.
