No one can make dumplings like my mother, but I certainly try to get as close as I possibly can!

Ingredients

  • 1 1/2 cups Flour
  • 1/4 tsp. Crisco
  • 1 Egg
  • 1 small can evaporated milk
  • Chicken base or boillion
  • Large Hen
  • Salt and Black Pepper to taste

Step 1

Place hen in a large pot and cover with water, season with 1 to 2 Tblsp. chicken base, salt and pepper. Cool hen and de-bone and set aside. Beat egg, add 1/2 of can of milk and the same amount of water. Add crisco to center of flour. Slowly add egg mixture. Nead into flour until easy to handle.

Wipe board with a wet towel, then flour. Put a small amount of dough on the board and dust with flour. Roll out as thin as possible. Cut into squares.

Put seasoned water from hen on to boil Once it a rolling boil, drop dough in pot, one at a time, stirring each time. Once all the dough is in, lower the heat to a simmer. Add more black pepper, around a 1 tblsp. Put 2 tblsp. of flour and a little water to wet flour in a measuring cup. Add rest of canned milk and add water to make 3/4 cup. Pour slowly into pot. Mix well. Add chicken and stir. Put lid on pot and simmer 3-4 minutes.
