Greens with Asparagus and Oranges

Ingredients
- 2 cups sliced asparagus
- 1/2 cup mayonnaise
- 1/3 cup fresh orange juice
- 1/4 cup plain yogurt
- 1 tsp dijon mustard
- 1/2 tsp grated orange peel
- 1/8 tsp salt
- 1/8 tsp ground pepper
- 8 cups torn mixed greens
- 1/2 cup thinly sliced red onion
- 1 can mandarin oranges, drained

Preparation
Step 1
Cook asparagus in boiling water for 4 minutes; drain. Cool immediately in ice water; drain.
To prepare dressing, whisk together next 7 ingredients until blended. Combine greens, onion, oranges and asparagus in a bowl. Toss with enough dressing to coat. Serve immediately.
Remainder of dressing may be refrigerated for up to 3 days.
