Ingredients
- 2 T veg oil
- 1 t paprika
- 1 C flour
- 2 # chicken cut into chunks
- 1 C pineapple
- 2 T brown sugar
- 1 T white wine vinegar
- 4 basil leaves, chopped
- 1 t ground nutmeg
- 1 C pineapple chunks
- 2 C white rice cooked

Step 1
Heat oil in skillet. Combine paprika and flour in baggie and lightly coat chicken pieces
Saute the floured chicken, stirring occasionally, until golden brown, about 10 min
Mix pineapple juice, brown sugar, vinegar, basil, and nutmeg. Add mixture to skillet and stir.
Cover and reduce heat to low; simme 20min until chicken is done.
Add pineapple chunks and simmer 5 min.
Serve over rice.
