Ingredients

  • 1/3 c all purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb lean chicken breasts, 4 4-oz pieces
  • 2 tsp olive oil
  • 1/3 c chicken broth
  • 3 Tbsp lemon juice
  • 2 Tbsp white wine
  • 1 Tbsp butter
  • capers
  • artichokes

Preparation

Step 1

Mix flour with salt and pepper; coat chicken.

In a nonstick skillet heat oil. Cook chicken until just cooked through and golden. Keep warm.

Deglaze skillet with broth; add lemon juice, wine and artichokes.

Reduce heat to medium. Reduce mixture by half; swirl in butter. Add capers.
Pour over chicken.
