  • # 6 eggs
  • # 1 tsp butter, melted
  • # 1 tsp salt
  • # 5 - 6 cups flout
  • # 1 qt. milk
  • FILLING
  • # 3 1/2 lbs ricotta
  • # 6 eggs
  • # parmesan cheese to taste
  • # salt
  • # parsley
  • # mozzarella cheese

Step 1

Beat together the first set of ingredients, alternating the flour and milk. Add a little butter to a 5 - 6" crepe pan. Pour a large spoonful of batter into the hot pan. Allow to set, possibly turning once. Remove and place on paper towels to cool. For filling, combine ricotta, eggs, salt, parsley and grated cheese in bowl. Place 1 tbsp. filling in each crepe. Cut mozzarella cheese into slices and put a couple on top of ricotta mixture. Fold over and place in pan with a little tomato sauce on the bottom. Top with additional sauce and bake in a 350-degree oven for 15 - 20 min.
