Cauliflower with Mustard-Lemon Butter

- 1 head cauliflower
- 1 tsp coarse salt
- 6 tbs butter
- 2 tbs fresh lemon juice
- 2 tbs whole-grain Dijon mustard
- 1 1/2 tsp grated lemon peel
- 1 tbs chopped fresh parsley

Step 1
Preheat oven to 400 degrees
Butter a rimmed baking pan. Cut cauliflower in half, then cut crosswise into 1/4" thick slices. Arrange slices in a single layer on prepared baking pan. Sprinkle with salt. Roast 5 minutes until slightly softened.
Meanwhile, melt butter in small saucepan over medium heat. Whisk in the lemon juice, mustard and lemon peel. Spoon butter mixture evenly over cauliflower and roast 10 minutes longer until crisp tender. Transfer to platter and sprinkle with parsley. Serve warm or at room temperature.
