Ingredients

  • 2 tablespoons unsalted butter
  • 1/4 cup minced onions
  • 2 = tablespoons all-purpose flour
  • 1 = cups whole milk
  • 2 teaspoons nutmeg
  • Kosher salt, to taste
  • 1/8 teaspoon white ground pepper
  • 1 (10-ounce) box frozen chopped spinach, thawed in the refrigerator
  • 2 tablespoons grated parmesan cheese

Preparation

Step 1

Melt the butter in a saucepan over medium heat. Add the onions and cook 3 minutes until tender. Add the flour and mix to form a paste. Cook over very low heat, stirring frequently, 10 minutes; do not let it brown. Add the cold milk, nutmeg, salt and pepper and whisk until smooth. Bring to a boil, reduce heat and gently simmer 10 minutes. Strain through a fine mesh strainer and set aside.
Place the spinach in a kitchen towel and squeeze any excess liquid. Place the spinach in saucepan with white sauce; mix to combine and simmer 3 minutes. Add parmesan cheese and stir until melted. Adjust salt. Makes 4 servings.
