Ingredients
- 1 pie crust (i use either a whole wheat one or gluten free from Whole Foods)
- 4 cups of ANY type of berry (raspberry, blueberry, strawberry, blackberry), yes, you can use frozen and you can mix up in any way you like. If you use frozen, there is no need to defrost, just let tha
- 2 cups flour
- 3 tbs agave nectar
- 8 tbls Smart Balance or butter – cold
- 1/4 cup brown sugar
- 1 cup pecans or walnuts
- juice from half of a lemon
- 1 tsp cinnamon
- 1 packet instant maple/brown sugar oatmeal or 1 cup plain oatmeal

Step 1
Pre-heat oven to 350 degrees and place your rack in the center of the oven. Place berries in a bowl and mix in 1 cup of the flour and the agave nectar. Pour in to the pie crust. Place the next six ingredients, plus the 1 cup of flour into your food processor – don’t be scared*!! This is a great way to get use to it, because you will be making this crumble alot in the summer! Pulse the crumble about 115 times…just until mixed…it will look like a large blob of rough dough! Remove it and press it into the berries – not hard, but making sure it covers most of the top. Place it in the oven and cook uncovered for about 40 minutes. It’s done when the top gets a bit browned. Let cool for about 10 minutes, enjoy!
* If you do not have a food processor, place all crumble ingredients into a large zip lock bag and squeeze it around until all blended. You will need to chop the nuts before you do this. Once blended through, you can follow the same directions.
