Ingredients
- 1 1/2 pounds lean pork tenderloin
- Dash of salt and pepper 1/8 teaspoon ground cloves
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon fennel seeds
- 1 tablespoon olive oil
- Aluminum foil wrap
- 1 1/2 cups low sodium chicken broth
- 3 tablespoons maple syrup
- 2 tablespoons chili sauce
- 2 tablespoons chopped green onions

Preparation
Step 1
Cut tenderloin crosswise into 1-inch slices. Using a meat mallet, pound the medallions between 2 sheets of plastic wrap to a 1/2-inch thickness; sprinkle with salt, pepper, cloves, cinnamon, and fennel seeds. Heat the oil in a large skillet over high heat; add pork and cook until brown and cooked through, about 3 minutes per side. Transfer to a plate and tent with foil. Add broth, maple syrup and chili sauce to the skillet. Boil for 2 to 4 minutes or until reduced to about 1/2 cup. Pour sauce over pork, sprinkle with chopped green onions and serve.
SERVING SUGGESTION: Baked sweet potatoes and steamed broccoli spears.
GLUTEN FREE: Make sure chicken broth and chili sauce are gluten free.
