Ingredients

  • 1 box yellow cake mix or basic yellow cake
  • 1/2 cup dark rum
  • 1 package instant vanilla pudding
  • 1 cup finely chopped pecans
  • Zest from 1 large lime
  • 1/2 to 3/4 cup basic vanilla icing or store bought vanilla icing
  • 24 oz white chocolate for coating
  • zest from 1 large lime, for garnish

Preparation

Step 1

1. mix together the ingredients for making a yellow cake. Add the dark rum and vnailla pudding. After the ingredients are fully combined, stir int eh pecans and lime zest.

2. Follow the instructions for baking the cake.

3. While the cake is cooling, prepare the icing or open your store bought icing.

4. After the cake has cooled, crumble, mix with icing, form into balls, roll, and freeze for at least 2 hours.

5. After the cake balls are dipped in white chocolate, top each with a little lime zest.
