Oven-Fried Barbecue Chicken

Ingredients
- 1 (6 oz) can french-fried onions, crushed
- 1/2 c grated Parmesan cheese
- 1 tsp dried parsley flakes
- 1/2 tsp ground black pepper
- 1/4 tsp salt
- 1/2 c vinegar-based barbecue sauce, plus more for serving
- 6 boneless, skinless chicken breasts (about 2-1/4 lbs)

Step 1
Preheat oven to 350º. Line a large rimmed baking sheet with aluminum foil; place a wire rack over foil, and spray with nonstick cooking spray.
In a shallow dish, stir together crushed onions, Parmesan cheese, parsley flakes, salt and pepper. In another shallow dish, pour barbecue sauce.
Dip chicken in barbecue sauce to coat, and dredge in onion mixture, gently pressing to adhere. Place chicken on prepared rack.
Bake for 20 to 25 minutes or until chicken is cooked through. Serve with additional barbecue sauce, if desired.
**I didn't use the wire rack and the coating was soggy and didn't stick to the bottom of the chicken. It still tasted really good, though.
