Ingredients
- 2 8 ounces anchovy fillets
- 2 medium garlic cloves chopped
- 1 teaspoon of tomato paste
- 1-11/2 tablespoons oil
- 2 teaspoons of lemon juice
- vinegar
- freshly grounded pepper
- 8-10 slices of white bread
- 1 teaspoon chopped parsley

Preparation
Step 1
1. Drain the anchovies and place them in a mortar with garlic and tomato paste.
2. Mash until smooth puree, then dribble the oil a few teaspoon at a time stirring constantly until the mixture becomes thick.
3. Stir in the lemon juice and pepper.
4. Preheat the oven to 500, and brown the bread.
5. Spread the untoasted side with the anchovy mixture.
6. Bake 10 minutes and sprinkle with chopped parley.
