Ingredients
- 2 # Shrimp
- 1 # green pepper
- 1/2 bunch green onions
- 1/2 cup chicken base
- 1 # andouille sausage
- 1/4 # proscuitto
- 1.25 # penne pasta
- 3/4 cup flour
- 1/4 # butter
- 4 Tbls. garlic
- 1 # tomatoes
- 2 qts. heavy cream
- 1/2 gallon water
- Salt and Pepper to taste
- 1/4 cup cajun spices(taste before putting all in...quite spicy)

Step 1
Cook shrimp in oven and cool, reserving liquid. In a large stockpot, fry sausage, proscuitto and garlic for 5 minutes. Add tomatoes, peppers, 1/2 onions and fry 10 more minutes. Add butter, let melt, add flour and incorporate well. Add remaining liquid and simmer for two hours. Should be thick at this point, if not make a little roux on the side and thicken stock. Adjust seasoning to taste, add seafood and the liquid from them. Cook pasta al dente. Pour sauce over pasta and top with remaining onions.
