Ingredients

  • 24 slices Italian bread, diagonally sliced
  • 3 Tb roasted garlic olive oil
  • 1 c. blue cheese dressing
  • 6 dried pear halves, finely diced
  • 1/4 c. sliced scallions
  • 3/4 lb medium rare roast beef, diced
  • 1 c. tomato, diced
  • 1/2 c. basil leaves, shredded

Preparation

Step 1

Preheat oven to 300. Brush one side of the bread slices with oil, place oil side up on sheet
Bake 12 mins, turn slices over and bake another 8 mins
Cool (can be made up to 1 day ahead)
In small bowl, combine dressing, pears and scallions
In second bowl, toss roast beef, tomatos, salt and pepper
Spread crostini with blue cheese spread
Top with roast beef mixture and shredded basil
