Thin Mint Cookies

Ingredients
- 3 sticks butter, room temp
- 1 c sugar
- 1 1/2 t Peppermint extract
- 3 1/2 c flour
- 1 1/4 c unsweetened cocoa powder
- 1/4 t kosher salt
- 10 oz bag dark chocolate chips
- 1 stick butter
- 1/2 t peppermint extract

Step 1
Preheat oven to 350*.
In the bowl of an electric mixer fitted witha paddle attachment, mix together butter & sugar until just combined, then add peppermint extract. In a medium bowl, add flour, cocoa and salt. Slowly add dry ingredients to butter-sugar mixture until dough statrs to come together.
By hand, roll dough into balls slightly smaller than the size of a golf ball and place on cookie sheet. With the bottom of a glass or palm of your hand, flatten until dough is approximately 1/2 in thick.
Bake for 15 minutes and place on rack to cool.
Meanwhile, melt chocolate chips and butter, add peppermint extract.
One by one, dip bottom of cookie in melted mixture, then turn to coat top of cookie. place on wax paper lines sheetand let cooluntil hardened.
