Ingredients
- 4 6-ounce grouper fillets
- cooking spray
- 1 tbls olive oil
- 2 cups chopped onion
- 1 tbls ground cumin
- 1 garlic clove minced
- 1/4 cup water
- 2 tbls chopped fresh cilantro
- 3 tbls fresh orange juice
- 2 tbls pitted green olives
- 1 tbls fresh lime juice
- 1 tbls capers
- 2 tbls tomato paste
- 1 10-ounce can diced tomatoes with green chilis

Preparation
Step 1
1. Preheat oven to 400°
2. Place fish in a 13 x 9 inch baking dish coated with cooking spray
3. Heat oil in a large nonstick skillet over medium high heat. Add onion, cook three minutes. Add cumin and garlic, sautee 1 1/2 minutes. Add water and remaining ingredients. bring to a boil. Reduce heat, simmer three minutes or until slightly thick. Pour tomato mixture over fish.
4. Bake at 400 for 20 minutes or until fish flakes easily with fork.
