  • 2 lb. red potatoes
  • 1 box (3#) kosher salt
  • 1/4 cup butter
  • 2 Tbsp. chopped chives
  • 1 tea. chopped tarragon

Step 1

Heat oven to 400 degrees. Using a sharp paring knife, carve "X" on top of each potato.

Spread 3 cups kosher salt in bottom of 9x13 baking dish. Nestle potatoes in kosher salt; cover with remaining salt. Roast 30 minutes, or until tender. Brush salt off potatoes.

In skillet over medium heat, melt butter. Add chopped chives and tarragon.

Toss hot potatoes with herb butter.
