Ingredients
- Maple Sauce:
- 1 1 1/3 lb (650 g) bison tenderloin (or steak)
- Pepper
- 3 tbsp (45 mL) butter
- 2 tbsp (30 mL) shallots, finely chopped
- 2/3 cup (150 mL) red wine
- 4 tbsp (60 mL) maple syrup
- 1 cup (250 mL) game stock or demi-glaze sauce
- 4 tbsp (60 mL) cream (35%)
- Salt and pepper

Preparation
Step 1
Pepper bison tenderloin. Cook on oiled barbecue grill over medium-high heat for 15-20 minutes until preferred doneness, turning occasionally. Do not overcook. Pour a generous amount of Maple Sauce in oval serving dish. Place tenderloin in serving dish, having carved a few slices. Serve with steamed broccoli and barbecue grilled sweet potatoes.
Maple Sauce:
In small saucepan, sauté shallots in butter for 2 minutes while stirring. Pour in wine while scraping bottom with a spatula. Simmer until reduced to half, stirring occasionally. Stir in maple syrup, game stock and cream.
Season to taste with salt and pepper. Simmer until sauce has reduced to half. Serve with red meat.
