Ingredients
- 3 slices bacon -- thinly sliced
- 1 small red onion -- sliced
- 2 cloves garlic -- smashed
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1 pinch red pepper flakes
- 8 cups kale or collard greens -- chopped
- 1 1/2 cups chicken broth plus 1/4 cup
- 1 can diced tomatoes -- drained
- 2 teaspoons cider vinegar
- fresh ground black pepper -- to taste

Step 1
Cook bacon over medium heat in skillet until crisp, about 6 minutes. Add onion, garlic, oregano, salt, pepper flakes, and tomatoes, and cook until vegetables are tender, about 5 minutes. Stir in greens and 11/2 cups of broth, cover and cook until greens are wilted, about 8 minutes. Stir in remaining 1/4 cup of broth and vinegar, season with salt and pepper to taste. serve.
