  • 3 slices bacon -- thinly sliced
  • 1 small red onion -- sliced
  • 2 cloves garlic -- smashed
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1 pinch red pepper flakes
  • 8 cups kale or collard greens -- chopped
  • 1 1/2 cups chicken broth plus 1/4 cup
  • 1 can diced tomatoes -- drained
  • 2 teaspoons cider vinegar
  • fresh ground black pepper -- to taste

Step 1

Cook bacon over medium heat in skillet until crisp, about 6 minutes. Add onion, garlic, oregano, salt, pepper flakes, and tomatoes, and cook until vegetables are tender, about 5 minutes. Stir in greens and 11/2 cups of broth, cover and cook until greens are wilted, about 8 minutes. Stir in remaining 1/4 cup of broth and vinegar, season with salt and pepper to taste. serve.
