  • 1 3/4 cups macaroni cheese
  • 1 cup shredded low-fat cheddar cheese
  • 1/4 cup nonfat plain yogurt
  • 2 tsp. butter
  • 1/2 Tbsp. Dijon mustard
  • Salt and freshly ground black pepper

Preparation

Step 1

Bring a large pot of water to a boil. Salt the water and add the macaroni; cook until tender, about 8 minutes.
While the pasta is cooking, mix together the cheese and yogurt.
When the pasta is done, drain and set aside. Put the pot back on the stove over medium heat and add the butter. When the butter is melted, stir in the mustard and season with salt and pepper. Add the cooked macaroni, tossing to coat. Mix in the cheese and yogurt. Continue to cook, stirring constantly, until the cheese is melted.
