Ingredients

  • 8 cups celery, chopped
  • 1 medium onion, cut up
  • 3 cups water
  • 1 teaspoon parsley
  • 1 bay leaf
  • 1/4 teaspoon thyme
  • 1 tablespoon chicken bouillon granules
  • 1 teaspoon salt
  • sprinkle pepper
  • 1 cup potatoes, mashed
  • 2 cups milk
  • 2/3 cup evaporated skim milk

Preparation

Step 1

Combine first 9 ingredients in large saucepan. Cook until vegetables are tender. Do not drain. Discard bay leaf. Puree with liquid in 2 or 3 batches in blender. Return to saucepan.

Add potato and both milks. Heat, stirring often, until bubbly hot.
