Ingredients

  • Marinade:
  • 2 1/2 lb. beef skirt steak
  • 1 green pepper
  • 1 medium onion
  • 2 green onions
  • 2 cloves garlic
  • 2 8 oz. bottles Italian dressing
  • 1/4 tsp. black pepper
  • 1/2 tsp. salt
  • 1/4 C. Worcestershire sauce
  • 1/2 C. beer
  • 1/2 C. cola
  • 10 10 in. flour tortillas
  • Shredded cheddar cheese
  • Dairy sour cream
  • Guacamole
  • Salsa:
  • 1 15 oz. can whole tomatoes
  • 1/2 medium onion
  • 1 4 oz. can chopped green chiles
  • 1 8 oz. bottle taco sauce
  • Salt
  • Pepper

Preparation

Step 1

1. Cut steak into bite-size strips. Remove core and seeds from green pepper and cut into strips. Peel and slice onion.

2. Prepare the marinade: Chop the green onions; mince the garlic. In a 9 x 13 inch pan combine the green onions, garlic, Italian dressing, pepper, salt, Worcestershire sauce, beer and cola. Add the steak pieces and the slices of green pepper and onions and toss well. Refrigerate several hours, stirring occassionally.

3. Meanwhile, prepare the salsa. Drain the tomatoes; cut the onion into chunks. In the bowl of a food processor, combin the tomatoes, onion, chiles, taco sauce, salt and pepper. Process until well blended. Chill.

4. Just before serving time, grill the beef strips and green pepper and onion slices. Warm the tortillas to soften them. (Wrap the stack in foil and place briefly on grill.)

5. Assemble starting with beef, onion and pepper, top with salsa and other toppings.
