Mai Tai

Tobin and I first enjoyed this recipe at dinner with Rieber and Teresa at their first home in Altus, OK. In celebration of us moving to Hawaii, this was a very appropriate cocktail choice. After months of me asking Tobin to get the recipe, he finally came through and we were able to share it with guests in our Waikiki apartment! This is a strong drink, play around with the alcohol and the grenadine which makes it very sweet!

Ingredients
- 1/3 cup pineapple juice
- 1 jigger dark rum
- 1 jigger triple sec
- 2 Tbsp grenadine
- Splash of lime juice
- Pinch of sugar

Preparation
Step 1
Combine all ingredients in shaker with lots of ice. Strain into glass, top with sliced pineapple, maraschino cherry and umbrella if available. Yields: 1 cocktail.
For more:
5 ½ cups pineapple juice
12 oz dark rum
10 oz triple sec
¾ cup grenadine
½ cup lime juice
