Island Limeade

We first made these on my 32nd birthday during a visit from my mom. We used frozen limeade because we were short on time and shared them with several friends at our favorite whale watching spot near the cave of Portlock. They were simple to make and a crowd pleaser – but I am not sure that some of our friends had ever had limeade before!

Ingredients

  • 3 cups water
  • 1/2 cup sugar
  • 1 1/4 cups fresh-squeezed lime juice
  • 6 oz dark rum

Preparation

Step 1

Combine 3 cups boiling water with 1/3 to ½ cup sugar to taste. Stir until the sugar dissolves; chill. Add 1 ¼ cups fresh-squeezed lime juice to make limeade. Fill 4 tall glasses with ice and 1 ½ ounces dark rum each. Top with limeade.
