Ingredients
- 5 to 7 pound pork roast
- Garlic Seasoning "For Plantain & Yucca" Iberia brand
- All Purpose Seasoning (Adobo)
- Ground Comino (to your taste)
- Ground Black Pepper (to your taste)
- Sazon Goya (Coriander & Annatto) ....use one package
- Sazon Goya (without Annatto) ...use 2 packages
- Salt - to your taste
- Fresh Garlic...4-5 teeth
- 2 lemons

Step 1
Wash and clean the pork....after this is done, prick it with a knife (an inch wide and deep) many times. Then squeeze a couple of fresh lemons into the holes, quite generously.
Put 8 ounces of Garlic Seasoning in a bowl, mix it with a teaspoonful of "All Purpose Seasoning", ground comino, ground black pepper and salt. (to your taste).
Add also two packages of Sason Goya (Without Annatto)
Grind 4 to 5 teeth of garlic an add to the mixture.
After all of this is done, the roast pork is ready to be saturated with the mixture.
Wrap the roast in aluminum foil..Put in roasting pan, cook for 3 hours at 350 degrees.
You can also use an oven bag.
