Ingredients

  • 2 TBS rice vinegar
  • 1 TBS fresh lime juice
  • 1 tsp sugar
  • 1 tsp chili garlic sauce
  • 1/2 tsp kosher salt
  • 1/3 cup each matchstick carrots and daikon radish
  • 1/3 cup seeded, sliced cucumber

Step 1

1. Whisk together vinegar, lime juice, sugar, chili garlic sauce, and salt until sugar and salt dissolve.
2. Combine carrots, daikon and cuke in a bowl. Pour marinade over vegs and refrigerate 1 hour. Drain vegetables in a colander before serving.
