This is a creamy chocolate mousse that is sure to please. You can make full servings for just a few people or tasting servings for a large number of people.

Bailey's Irish Cream Chocolate Mousse 1 Picture

Ingredients

  • (About 8 full servings or approximately 32 tasting party servings)
  • 8 ounces of dark chocolate. (I used Ghiradelli chips but you can use whatever dark chocolate you prefer)
  • 6 eggs (room temperature and separated)
  • 3 tablespoons of Bailey's Irish cream liqueur
  • 1/2 teaspoon of vanilla (optional)
  • 1/2 teaspoon of cinnamon (optional)
  • 2 cups of whipped cream (you will make this using the egg whites)
  • Chocolate shavings to top (optional)
  • Irish cream infused fruit to top (optional)
  • FOR THE WHIPPED CREAM TOPPING
  • 1 cup of heavy whipping cream
  • 1 tablespoon of sugar

Step 1

1. Make the whipped cream for the mousse using the egg whites you separated. Place in a Kitchen-aid stand mixer. Add two tablespoons of sugar and whisk until stiff peaks forms. Set aside.
2. Melt the 8 ounces of dark chocolate. I prefer a double boiler or you can simply use a glass bowl sitting over a pan of simmer hot water. (The water should not touch the bowl though). Melt the chocolate fully.
3. Beat the egg yolks until slightly fluffy. Add the Irish creme liqueur, vanilla and cinnamon. Mix well.
4. Fold the chocolate into the egg yolk mixture. Mix well.
5. Fold the egg white mixture into the chocolate mixture. Do this slowly. You want to keep the whipped cream fluffy. Fold in gently.
6. Spoon the mixture into your bowls. (I use tasting bowls for parties and full size ramekins for smaller dinners). Chill while you make the whipped creme topping.
7. Whisk the heavy whipping cream and sugar together using a Kitchen Aid stand mixer. Mix until stiff peaks form.
8. Use a pastry bag and small tip to add the whipped cream to the top of your chilled mousse. Top with liqueur-infused fruit if you want and chocolate shavings. Serve!
