Ingredients
- 4 (4-oz.) boneless top loin pork chops, 3/4" thick
- 1/4 cup finely chopped red onion
- 1/4 cup lime juice
- 2 fresh Serrano OR jalapeno peppers, seeded and finely chopped
- 1/2 tablespoon sesame oil
- 1 teaspoon cumin seeds, crushed
- 4 plum (Roma) tomatoes, chopped
- 1 small cucumber, seeded and chopped
- 2 green onions, sliced
- 2 tablespoons chopped cilantro
- 1 tablespoon honey
- 3 tablespoons jalapeno jelly

Preparation
Step 1
Trim fat from pork chops and place in a large zipper-topped plastic bag. Prepare marinade: In a small bowl, combine onion, lime juice, Serrano or jalapeno peppers, sesame oil and cumin seed. Reserve 2 tablespoons of the marinade for the salsa and pour the remainder over the chops. Seal the bag and refrigerate for 2 to 4 hours, turning the bag occasionally. Prepare salsa: In a medium bowl, combine reserved marinade, tomatoes, cucumber, green onions, cilantro and honey; cover and refrigerate until ready to serve. Preheat indoor or outdoor grill to medium heat. Drain chops, reserving marinade. Transfer marinade to a small saucepan and add the jalapeno jelly; cook and stir until mixture boils; set aside. Grill pork chops for 8 to 11 minutes or until chops are cooked through and juices run clear, turning once and brushing occasionally with jelly mixture during the last 5 minutes of grilling. Serve the chops with the salsa.
SERVING SUGGESTION: Brown rice and steamed green beans.
