  • 2 cups self-rising cornmeal
  • 1 cup self-rising flour
  • 1/4 c. sugar
  • 1 egg, beaten
  • 1 1/4 cups buttermilk
  • 3/4 c. dried cranberries
  • 2 tbsp. grated orange rind
  • 2 tbsp. butter

Preparation

Step 1

Preheat oven to 400 degrees. Combine cornmeal, flour, sugar, egg, and buttermilk in a large bowl and mix by hand until smooth. Add cranberries and orange rind. Rub an 8" or 9" square ovenproof pan with butter.
Pour in batter.
Bake, uncovered, for 20 to 25 minutes or until browned on top and cooked through.
