Ingredients
- 6 ounces linguine
- 1 tablespoon olive oil
- 1 cup diced red and orange peppers
- 1 1/2 cups sliced baby Portobello mushrooms
- 1 cup Asian peanut sauce
- 2 1/2 cups shredded cooked chicken
- 1 cup grape tomatoes, halved lengthwise

Preparation
Step 1
Cook pasta al dente according to package directions.
Meanwhile, place olive oil in a large skillet over medium heat. Add peppers and cook 3 minutes, stirring occasionally. Add mushrooms and continue cooking another 3 minutes. Add peanut sauce, chicken and tomatoes and cook until heated through, another 5 minutes. Serve over noodles.
