Ingredients

  • 1 cup melted butter
  • 2 cups sugar
  • 2 tsp vanilla
  • 1/2 tsp salt
  • 1 1/2 tsp baking soda
  • 2 lg eggs
  • 2 1/2 cups flour
  • 1 cup dried blueberries
  • 2 cup GROUND dry oatmeal (measure before grinding)

Preparation

Step 1

Melt the butter. Add sugar and mix well.
Add vanilla, salt, and baking soda. Mix well.
When the mixture is cool, stir in beaten eggs. When they are fully incorporated, add the flour in half-cup increments, stirring after each addition.
Mix in the dried blueberries.
Measure out 2 cups oatmeal and place them in food processor, process until the consistency of coarse sand.
Add ground oatmeal to your bowl, and mix it in. The dough will be quite stiff.
Roll walnut sized balls with your hands and place them on baking sheets. Squish the ball a bit. Medium cookie scoop-44 cookies.
Bake at 350 F for 10-12 min. or until golden brown on top. Cool on the cookie sheet for 2 min.
