    cup whipping cream

Directions

Crust: In a small bowl stir together crushed cookie and melted butter or margarine till well combined. Press crumbs mixture evenly onto the bottom of a gressed 9-inch springform pan. In a large bowl combine cream cheese, 2/4 cup sugar, whipping cream, and cornstarch. Beat with an eletric mixer till smooth. Add eggs and egg yolk, one at a time, beating well after each addition. Beat in vanilla extract. Remove 1 1/3 cups of the mixture and put into a small bowl; stir in strawberry schnapps and food coloring. Set aside. Remove another 1 1/3 cups of the mixture and put into a small bowl: stir in vanilla liqueur and vanilla extract. Set aside. Stir creme de caco, cocoa powder, and 2 1/2 tbs sugar into the remaining cream cheese mixture. Pour the chocolate mixture over the crust. Pour the strawberry mixture over the chocolate mixture. Pour the vanilla mixture over the strawberry mixture. Pour the vanilla mixture over the strawberry mixture. Bake at 350* for 15 minutes. Lower the temperature to 200* and bake for 1 hour and 10 minutes or till the center no longer looks wet or shiny. Remove the cake from the oven and run a knife around the inside edge of the pan. Turn the oven off; return the cake to the oven for an additional 1 hour. Chill, uncovered, overnight. In a small bowl beat whipping cream and sugar with an electric mixure till stiff peaks form. Pipe whipped cream mixture around the edge of the cheesecake. Garnish with chocolate-dipped strawberries. Chill till serving time. Makes 12 to 18 slices.
