Ingredients

  • 1 Package (4-servings) Jello Vanilla or Banana Cream flavor cook and serve pudding and pie filling
  • 2 Egg Yolks
  • 2 1/2 cups milk
  • 30-35 Vanilla wafers
  • 2 large bananas sliced
  • 2 Egg Whites
  • Dash of salt
  • 1/4 cup sugar

Step 1

Preheat oven to 425 degrees

Combine Pudding mix, egg yokes and milk in medium saucepan. Cook in medium heat until mixture comes to a full boil, stirring constantly. Remove from heat. Arrange layer of vanilla wafers on bottom and up sides of 1 1/2 quart baking dish. Add one layer of banana slices, top with 1/3 of pudding. Continue layering wafers, bananas and pudding, ending with pudding.

Beat egg whites and salt with electric mixer until foamy. Gradually add sugar, beating until stiff peaks form. Spoon lightly on pudding, sealing edges well.

Bake 5 to 10 minutes or until meringue is lightly browned. Serve warm or refrigerate until ready to serve. Before serving, garnish with additional vanilla wafers and banana slices, if desired.
