Ingredients

  • 1/2 pound ground beef
  • 4 tablespoons butter, divided
  • 3/4 cup minced onion
  • 3/4 cup shredded carrots
  • 3/4 cup finely diced celery
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley flakes
  • 1-3/4 pounds (about 4 cups) cubed peeled potatoes
  • 3 cups chicken broth
  • 1/4 cup all-purpose flour
  • 2 to 4 cups shredded Velveeta* process cheese
  • 1-1/2 cups whole milk
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground pepper, or to taste
  • 1/4 cup sour cream

Preparation

Step 1

Place a large saucepan over medium heat. Add crumbled beef and cook until it is no longer pink. Drain beef and set aside.

In the same saucepan over medium heat, add 1 tablespoon butter, onion, carrots, celery basil, until vegetables are tender 8 to 10 minutes, stirring often.

Add potatoes, ground beef, and broth. Bring to a boil. Reduce heat, cover and simmer until potatoes are tender about 12 minutes.

Meanwhile in a small skillet, melt remaining 3 tablespoons butter and add flour stirring and cooking until bubbly, 3 to 5 minutes. Reduce heat to low. Stir in cheese, milk, salt, and pepper; cook until cheese is melted. Remove from heat and then blend in sour cream.
