Sausage, Eggplant and Pepper Stew 1 Picture

Ingredients

  • 2 medium eggplants, cut into cubes
  • 1 28oz can crushed tomatoes
  • 2 tablespoons olive oil
  • 2 red bell peppers, chopped
  • 2 onions, chopped
  • 2 cloves of garlic, minced
  • 1/2 tsp. crushed red pepper
  • 6 italian sausages

Preparation

Step 1

Stir eggplant and tomatoes together in crock pot. In a separate pan, warm oil and cook peppers and onions until slightly tender. Stir in garlic and red pepper. Season with salt. Add mixture to crock pot.

Using the same pan, add more oil and cook sausages until browned. (option to slice these here. Mix into the crock pot. Cook for 4-5 hours and season with salt and pepper.
