Ingredients

  • 2 hard boiled eggs, diced very small
  • 2 tbsp greek yogurt
  • 1 tsp. Sriracha Mayo (this amount is barely noticeable - might want to try some kind of hot sauce or chili sauce directly)
  • 1/2 avocado, diced very small
  • 1 scallion, minced
  • chopped fresh dill, cilantro, basil or other herbs, as available
  • salt & pepper to taste
  • 1/4 tsp Cajun seasoning or Aleppo pepper (Optional)
  • 1 1/2 cups Spring Mix
  • 6 WW Whole Wheat Tortillas

Step 1

Combine egg salad ingredients and refrigerate.

To assemble, line wrap with spring mix or other greens, divide egg salad evenly, wrap up and serve. They stay well from when you make them at home in the a.m. until you eat them at work for lunch.
