Raspberry Champagne Cocktail
A great way to make use of leftover raspberries. Depending on your mood, you may adjust the ratio of raspberries to champagne as desired. Makes the perfect cocktail for a nice brunch.

I muddled the infused raspberries then tossed them in the blender for a quick pulse. I didn't strain them so I got the full texture of the muddle raspberries. I used a lot of raspberries in proportion to the champagne (for the first drink at least). It was brunch at home after all. I wasn't looking for a 'Sunday Funday' just yet...just a nice addition to Sunday brunch.
After the first drink, I decided to up the champagne content more than a tad for cocktail number two! Both versions were tasty...and made great use of the leftover raspberries. No food should ever go to waste!
