Chocolate Strawberry Muffins

Strawberry Chocolate Chip Muffins- Everything you love about chocolate covered strawberries all wrapped up into a soft and fluffy muffin. A breakfast treat that is sure to bring a smile to any face!

Ingredients

• Optional drizzle:
• 2 eggs
• 1 cup + 2 Tbsp sugar
• 1/4 cup melted butter
• 1/4 cup canola oil
• 1 cup buttermilk
• 1 1/2 tsp vanilla
• 2 1/2 cups flour
• 2 1/2 tsp baking powder
• 1 tsp salt
• 1 cup diced strawberries
• 3/4 cup semi-sweet chocolate chips
• 2 Tbsp semi sweet chocolate chips
• 1/2 tsp oil (I used coconut oil)

Preparation

Step 1

Beat eggs and sugar in a large mixing bowl till thick and pale yellow.
Add butter, oil, buttermilk, and vanilla. Blend well.
Whisk together flour, baking powder, and salt. Stir in lightly, then gently fold in strawberries and chocolate chips.
Fill greased muffin tins 3/4 full. Bake at 350° for about 20 minutes. Cool in pans for 5-10 minutes, then remove to cooling racks.
Melt together chocolate chips and oil and drizzle over muffins.
