Ingredients
- 1 pound angel hair pasta (capellini)
- 1/4 cup olive oil
- 3 garlic cloves, minced
- 3 large tomatoes, diced
- 1 teaspoon dried basil (see Note)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 cup chicken broth
- 1/3 cup grated Parmesan cheese

Preparation
Step 1
Cook pasta according to package directions and drain. Meanwhile, heat oil in a large skillet over medium-high heat.
Add garlic and cook 1 minute.
Add tomatoes, basil, salt, and pepper; cook 3 minutes.
Add chicken broth and mix just until warmed.
Place in a large bowl and add hot pasta; add Parmesan cheese and toss well. Serve immediately.
Notes:
If available, use 1 tablespoon chopped fresh basil in place of the dried.
